The story of this dish
Revani is a semolina cake soaked in syrup that has come down from Ottoman cuisine. There are different stories about its name: one says it commemorates the 1635 campaign to Revan (today's Yerevan), another that it is named after the 16th-century poet Revânî. Neither can be confirmed.
Today it is loved in Turkey and also in Greece, where it is called ravani. Much easier to make than baklava, it has become the practical star of Turkish tea tables, guest visits and holiday spreads.
