The story of this dish
The word poğaça is generally traced to the Latin "panis focacius", bread baked in the ashes of the hearth; Italian focaccia, Balkan pogača and Hungarian pogácsa all share the same root. The word reached Turkish via Byzantium and the Balkans and in time came to name a pastry of its own.
Today poğaça is the most loved savory bake of Turkish bakeries, patisseries and afternoon tea at home. It is made with cheese, olives, potato, ground meat or plain, and alongside the soft yeasted kind there is also a much-loved unleavened, crumbly version called yağlı poğaça.
