The story of this dish
Piyaz is a salad of boiled white beans made all over Turkey; its name is widely accepted to come from the Persian "piyāz", meaning onion. In most regions it is dressed with olive oil and lemon or vinegar.
What sets Antalya's piyaz apart is its thick dressing of tahini, lemon and garlic. In Antalya it is usually served alongside şiş köfte, grilled skewered meatballs, and in the city's köfte restaurants the two are an almost inseparable pair.
