The story of this dish
Pilaf was one of the most important dishes of Ottoman cuisine. The palace kitchens cooked dozens of versions, from saffron pilaf to pilaf with chickpeas, and at feasts it is said to have come to the table near the end of the meal. Because rice was long considered expensive, everyday pilaf in much of Anatolia was made with bulgur instead.
Over time rice pilaf found its way onto every table. Today it is the essential partner of countless dishes, from bean stew to vegetable casseroles, and a pot of perfectly separate grains is still seen as a mark of a good cook.
