The story of this dish
Pão de queijo comes from Minas Gerais, a state in Brazil's interior. According to the usual account, it emerged in the 18th-19th centuries in a region where wheat flour was expensive and scarce, by adding farm-made cheese and eggs to starch extracted from cassava root (polvilho), and enslaved cooks in farm kitchens are said to have played a major part in shaping it.
From the mid-20th century it spread beyond Minas Gerais and is now a staple of breakfasts, afternoon coffee and bakeries all over Brazil. The original uses Minas cheese; a mix of an aged semi-hard cheese and Parmesan gives a similar flavor and texture.
