The story of this dish
Feijoada takes its name from feijão, Portuguese for "bean". A popular story says it was created by enslaved Africans in Brazil, who cooked beans with the pork ears, feet and tails their masters didn't want. Many historians, however, find that explanation weak and see feijoada as a Brazilian reinterpretation, with black beans, of Portuguese meat-and-bean stews such as cozido.
Whatever its origins, feijoada is now considered Brazil's national dish; many restaurants in Rio de Janeiro traditionally serve it on Wednesdays and Saturdays, and it is the centerpiece of long weekend gatherings. The original contains pork cuts, bacon and linguiça pork sausage; this pork-free home version uses beef, beef sausage and smoked beef.
