The story of this dish
The name moqueca is often said to come from pokeka, a word the Indigenous Tupi used for fish wrapped in leaves and cooked in embers. Over time this native technique gained onions and tomatoes from the Portuguese and dendê oil and coconut milk through West African influence, producing a dish that gathers Brazil's mixed culinary heritage in a single pot.
Two versions are famous today: moqueca baiana from Bahia, made with dendê oil and coconut milk, and moqueca capixaba from neighboring Espírito Santo, made with olive oil and annatto (urucum) and no coconut milk. Which one is the "real" moqueca is a long-running, good-humored rivalry between the two states. This recipe follows the Bahian style.
