The story of this dish
Salade niçoise comes from Nice on the French Riviera. It is said to have started as a simple, inexpensive salad of tomatoes, hard-boiled eggs, anchovies and olive oil, with tuna, once a costlier ingredient, added later.
What belongs in a "true" niçoise is still debated in Nice. Traditionalists insist it should contain only raw vegetables plus eggs, and that potatoes and green beans are a later addition. Elsewhere, though, the version with potatoes and beans has become so widespread that most people know the salad that way, and this recipe follows it.
