The story of this dish
Mücver is one of the favorite ways Turkish cooks use up the summer glut of zucchini. Fritters of grated vegetables bound with egg and flour have many relatives across Anatolia and the Balkans, such as the Greek kolokithokeftedes.
The origin of the name is not certain, but today mücver is a staple of both home cooking and the meze spread of the meyhane, the Turkish tavern. Aegean cooks load it with dill, while in central Anatolia parsley and spring onion are more common, and it is almost always served with garlic yogurt.
