The story of this dish
Mercimek köftesi is often seen, though this is not certain, as a meatless home cousin of the raw-meat çiğ köfte of southeastern Anatolia; the way it is kneaded with bulgur, pepper paste and spices clearly echoes it. Made with cooked lentils, it is easy, economical and suitable for every table.
Today lentil patties are a classic of the Turkish "gün", the regular afternoon gatherings women host in their homes, as well as of picnic baskets and school lunchboxes. They are rarely served without lettuce, mint and lemon on the side.
