The story of this dish
Mantı traces its roots to Central Asia and is thought to have reached Anatolia with the westward migrations of the Turkic peoples. Similar filled dumplings are made under related names across a vast area from China to the Caucasus.
In Turkey, the capital of mantı is Kayseri, whose dumplings are famous for being tiny; a popular saying holds that forty good mantı should fit on a single spoon. It is often said that a young woman's skill in the kitchen used to be judged by how thinly she rolled the dough and how small she made her mantı.
