The story of this dish
Sushi traces back to a method used in Southeast Asia and China of preserving fish by fermenting it with rice; in this early Japanese form, called narezushi, the rice was discarded and only the fish was eaten. Over time the fermentation grew shorter, and in the Edo period (1603-1868) cooks began adding vinegar directly to the rice, turning sushi into a quick food.
