The story of this dish
Lokma takes its name from the Arabic word for "a morsel" or "a mouthful". Dipping fried yeasted dough in syrup or honey is an ancient tradition across the eastern Mediterranean: Greek loukoumades and Arab luqmat al-qadi belong to the same family, and no one can say for sure exactly where it began.
In Turkey, especially in İzmir and the Aegean region, lokma has a special meaning. After the death of a loved one, or when a wish comes true, families set up a cauldron in the street and hand out lokma to passers-by as a charitable act. Because of this custom of sharing, lokma is seen not only as a dessert but as a symbol of community.
