The story of this dish
Gà xào sả ớt means "chicken stir-fried with lemongrass and chili". Lemongrass, sả, is one of the core aromatics of Vietnamese cooking, and especially in the south meat, seafood and even tofu are cooked with this pairing.
More a home dish than a restaurant one, it has many versions that change from region to region and family to family: some add turmeric for a golden color, others use caramel sauce for a darker, sweeter finish. What they share is that the dish is quick to make and perfect with plain rice.
