The story of this dish
Meat wrapped in cabbage leaves turns up across Central and Eastern Europe: gołąbki in Poland, töltött káposzta in Hungary, sarma in the Balkans. Some food historians believe the Ottoman tradition of sarma and dolma helped spread the idea, though this is not settled.
German Kohlrouladen differ from Turkish lahana sarması in their rice-free, bread-bound filling and in being browned before braising in stock. Long considered thrifty everyday food, they remain a much-loved winter dish in German homes and traditional restaurants.
