The story of this dish
Kısır comes from the bulgur-loving kitchens of southeastern Anatolia and Hatay, where fine bulgur is the base of countless dishes. Because it needs no cooking, it travelled easily and is now made all over Turkey.
Why it is called kısır, a word that means "barren", is not known for certain. Today it is the star of women's afternoon gatherings, picnics and tea tables, and every family has its own balance of pomegranate molasses, pepper paste and heat.
