The story of this dish
Kazandibi is an offshoot of tavuk göğsü, a famous dessert of Ottoman pudding shops made with finely shredded chicken breast, milk, sugar and rice flour. The part that caught and caramelized at the bottom of the cauldron became a favorite in its own right and turned into a separate dessert, kazandibi, literally "bottom of the cauldron". The traditional version still contains chicken breast.
This recipe is the simple home-style version without chicken, made from plain milk pudding. Combining chicken and milk in a dessert is not unique to Turkey: medieval Europe's blancmange was originally made with chicken and milk too.
