The story of this dish
Kashk-e bademjan simply means "eggplant with kashk" in Persian. Kashk is a salty, tangy dairy product made by boiling down and drying yogurt or buttermilk, related to the kurut and keşk of Anatolia and the Caucasus. In Iran it is sold both as dried balls and as a ready-to-use cream.
The dish is known across Iran and usually appears as a starter or a light meal with bread. The garnish of fried onions, mint oil and walnuts isn't just decoration: it is a large part of the flavor.
