The story of this dish
Cheese cakes have a very long history; even ancient Greek and Roman writers describe cakes made with fresh cheese, honey and grain. In Central Europe the tradition took its own shape around quark, a tangy, light fresh cheese.
Today Käsekuchen is found in nearly every German bakery and home, especially at the afternoon coffee-and-cake ritual known as Kaffee und Kuchen. It is lighter, less rich and less sweet than American cheesecake, with a shortcrust base instead of crushed biscuits. Where quark is hard to find, smooth-blended curd cheese mixed with strained yogurt makes an excellent substitute.
