The story of this dish
Kartoffelpuffer is the best-known German name for fried pancakes of grated potato; depending on the region they are also called Reibekuchen, Reibeplätzchen or Reiberdatschi. As potatoes spread through Germany in the 18th century, they became a cheap and filling everyday food.
In the Rhineland in particular, Reibekuchen are eaten with apple sauce, or with dark rye bread and sugar-beet syrup. Today they are a favorite street food at German Christmas markets and fairs, where the pairing of salty potato and sweet apple sauce is considered perfectly natural.
