The story of this dish
Udon is one of Japan's oldest noodles. Legend has it that the monk Kūkai brought the art of making wheat noodles from China in the 9th century, but the story is more myth than record, and udon's true origin is uncertain. Today Sanuki udon from Kagawa, known for its firm, springy texture, is considered the most famous in the country.
"Kake" comes from the verb meaning "to pour over": noodles with hot broth poured over them, the most basic and pure form of udon. Traditional kake broth also contains mirin; this recipe uses a little sugar for the same gentle sweetness without alcohol.
