The story of this dish
Spinach is traced back to Persia and its surroundings, and the word is widely accepted to come from the Persian "ispanākh". In the Middle Ages it spread to the Mediterranean through the Arab world, reached Europe via Al-Andalus, and settled early into Anatolian cooking.
In Turkish cooking spinach is braised in olive oil, cooked with eggs, baked into börek or cooked with ground meat. Spinach with ground beef is one of the most common vegetable dishes on winter tables at home and in neighborhood restaurants, almost always with garlic yogurt and bread alongside.
