The story of this dish
The word helva comes from the Arabic for "sweet", and it mattered so much in Ottoman life that Topkapı Palace had a separate kitchen just for halva and confections, the helvahane. Halva gatherings on winter evenings, where friends met to talk over a pan of halva, were a long-standing tradition.
Semolina halva is still a symbol of sharing in Turkish culture. It is made and handed out to neighbors after a death in the family, on religious holy nights or when a wish comes true, and its smell filling the house is a childhood memory for many.
