The story of this dish
Hünkâr beğendi means "the sultan liked it" and is considered one of the most famous dishes of Ottoman palace cuisine. The best-known story says it was created in honor of the French Empress Eugénie when she visited Istanbul in 1869, and that she liked it so much the dish was named after the occasion. The story is disputed, however, and some researchers believe the eggplant purée is older.
