The story of this dish
Güllaç is made from dried, paper-thin sheets of wheat and corn starch that are soaked in sweetened milk. It is one of the old desserts handed down from Ottoman palace and mansion kitchens and is closely tied to Ramadan, loved because it is so much lighter than syrupy pastries after the evening iftar meal.
The origin of the name is uncertain. A popular explanation says the dessert was once flavored with rose water and called güllü aş, "dish with roses", which over time became güllaç. Today the sheets are usually bought ready-made, so it is easy to assemble at home.
