The story of this dish
Gözleme is one of Anatolia's oldest village breads, made by cooking thinly rolled dough on a "sac", a domed iron griddle set over a fire. Its name is said to come from being cooked over the "göz" (literally "eye") of the hearth, right above the flame; this explanation is not certain but widely accepted.
It comes in countless versions, with cheese, spinach, potato, ground meat or wild greens, and every region has its favorite. Women rolling out gözleme at a sac by the roadside or at village breakfast spots are one of Turkey's most familiar sights.
