The story of this dish
Gambas al ajillo simply means “prawns with garlic”. “Ajillo” comes from “ajo”, garlic, and appears in the names of many Spanish dishes made with lots of garlic and olive oil. The dish is a fixture of Andalusian cooking and of the tapas bars of Madrid.
It is traditionally cooked in small earthenware dishes called cazuelas and brought to the table while the oil is still bubbling. In tapas culture the garlicky oil left at the bottom is prized as much as the prawns themselves, and mopping it up with bread is part of the ritual.
