The story of this dish
Gà nướng simply means "grilled chicken" in Vietnamese, and countless versions are cooked over charcoal at street stalls across the country. Gà nướng sả, marinated with lemongrass (sả), is one of the best loved.
Grilling sits at the heart of Vietnamese street food: marinades balancing sweet, salty, sour and aromatic notes caramelise over the fire and give that familiar smoky aroma. Gà nướng is often served with broken rice (cơm tấm), fresh vegetables and a fish-sauce dip.
