The story of this dish
In Turkey, fava is made from dried split broad beans and is one of the essential cold mezes of Aegean and Istanbul meyhane culture. Broad beans have been eaten around the Mediterranean for thousands of years, and turning the dried beans into a purée is an old method found in many of the region's kitchens.
In neighboring Greece, the meze called "fava" is usually made from yellow split peas or a legume particular to Santorini; the name is the same but the ingredient differs. In the Turkish version, olive oil, dill and red onion are an almost unchanging trio.
