The story of this dish
The name lahmacun comes from the Arabic lahm bi'ajin, meaning "meat with dough". It has a long history in southeastern Turkey, especially Gaziantep and Şanlıurfa, as well as in neighboring Syria and Lebanon, and which city makes the best one remains a friendly argument.
Traditionally it bakes in a few minutes in a very hot stone oven. Gaziantep's version is known for being garlicky and milder, while Urfa's is spicier with isot pepper. Today it is a beloved street food all over Turkey and in many cities around the world.
