The story of this dish
İskender kebab is the signature dish of Bursa and, according to tradition, takes its name from İskender Efendi, who lived there in the second half of the 19th century. He is credited with the idea of roasting lamb on a vertical spit turning in front of the fire instead of a horizontal one, the method that gave rise to the doner kebab we know today.
Classic İskender is thin-sliced doner laid over pide, topped with tomato sauce, served with yogurt and finished at the table with sizzling butter. Since home kitchens have no vertical rotisserie, this recipe mimics doner with thinly sliced beef seared in a hot pan.
