The story of this dish
Adana kebab is the signature dish of the southern Turkish city it is named after and is protected by a geographical indication. Traditionally, the meat and tail fat of a male lamb are hand-minced with a wide two-handled knife called a "zırh"; only red pepper and salt are added before the mixture is pressed onto wide flat skewers and grilled over charcoal.
The true spirit of Adana is the charcoal fire, but a hot oven grill or cast-iron pan gets surprisingly close at home. The non-spicy version is usually known as Urfa kebab.
