The story of this dish
Çiğ köfte ("raw kofta") is one of the signature dishes of southeastern Turkey, especially Şanlıurfa. In the traditional recipe, lean raw meat is kneaded for a long time with bulgur and isot pepper, and the spices and kneading are said to "cook" the meat. The best-known story about its origin is tied to the legend of the Prophet Abraham and King Nimrod, but this is folklore rather than recorded history.
Because raw meat carries food-safety risks, the meatless version became the standard in commercial sale in Turkey, and today it is a street food sold as wraps all over the country. The meatless recipe is safe to make at home and is naturally vegan.
