The story of this dish
Chickpeas were among the first legumes domesticated in the Fertile Crescent and have been grown in Anatolia for thousands of years. Cooking dried legumes with a little meat is one of the oldest ways of turning a winter pantry into a filling meal.
Etli nohut is a classic of Turkish home cooking and of the esnaf lokantası, the traditional workers' restaurant. Like kuru fasulye (white bean stew), it is almost always paired with rice pilaf, pickles and a glass of ayran.
