The story of this dish
Tomatoes came from the Americas and entered Ottoman kitchens fairly late; they are usually said to have become widespread in the 19th century. That makes tomato soup a newcomer compared with centuries-old Turkish soups such as tarhana or lentil.
It quickly became a classic all the same. Thickened with a butter-and-flour roux, softened with milk and topped with grated cheese, it is now one of the most familiar flavors of esnaf restaurants and school canteens across Turkey.
