The story of this dish
Nobody knows for certain where churros come from, and there are several stories. One says shepherds in Spain's mountains, far from any bakery, fried a simple dough of flour, water and salt over the fire. Another suggests Portuguese sailors were inspired by the fried dough sticks they saw in China, known as youtiao, and brought the idea back to the Iberian Peninsula.
Whatever their origins, churros are now an essential Spanish breakfast and late-night snack. In Madrid especially they come with thick hot chocolate meant for dipping, and the shops that make them, called churrerías, open early in the morning.
