The story of this dish
Chilaquiles are one of the tastiest examples of Mexico's no-waste kitchen: day-old corn tortillas are fried and revived with sauce so nothing goes to waste. The name is generally traced to Nahuatl and is often explained as meaning something like "greens in chile sauce".
In Mexico they are a favorite breakfast and late weekend brunch, with a reputation as a cure after a long night out. There are two main styles, rojo and verde, depending on the sauce, and toppings such as shredded chicken, eggs or refried beans are very common.
