The story of this dish
Chả giò is the southern Vietnamese name for these fried rolls; in the north, especially Hanoi, the same dish is called nem rán. Its exact origins are uncertain, but it is generally seen as a relative of Chinese spring rolls that developed its own identity through Vietnamese rice paper and fish sauce.
