The story of this dish
Canh chua means "sour soup" in Vietnamese and is one of the signature dishes of the Mekong Delta. In this fertile region laced with rivers and canals, freshwater fish, pineapple, tamarind and greens are abundant, so the soup sums up the delta's cooking in a single bowl.
It is traditionally made with catfish and includes a spongy plant stem called bạc hà and local herbs such as ngò om (rice paddy herb). In southern Vietnam, canh chua is a classic part of everyday family meals, served with rice alongside a fried or braised dish.
