The story of this dish
Cacık is one of the simplest and oldest flavors of Turkish cooking, where yogurt has been a staple for centuries. The pairing of yogurt and cucumber is loved across a wide region: Iran has mast-o-khiar and Greece has tzatziki, a word generally accepted to come from the Turkish cacık.
In Turkey cacık appears in two guises: a thin, icy summer cooler sipped alongside beans, pilaf or fried vegetables, and a thick meze spread on bread at the tavern table.
