The story of this dish
Bœuf bourguignon is named after Burgundy (Bourgogne), the French region famous for its wine. It is generally thought to have begun in peasant kitchens as a way to tenderise tough, inexpensive cuts by braising them for hours in local red wine, although written recipes only appear from the 19th century onward.
