The story of this dish
Dolma comes from the Turkish verb dolmak, "to be filled", and covers every kind of stuffed vegetable. Dolmas held a special place in the Ottoman palace kitchen: vegetables stuffed with meat were eaten hot, while those filled with an olive-oil rice stuffing were served cold.
Since peppers came from the Americas, pepper dolma is a relatively young member of the family, but Anatolia embraced it quickly. Today etli biber dolması is one of the most loved summer and autumn dishes in Turkish homes, always with yogurt on the side.
