The story of this dish
Pilaki is the name of a Turkish cooking method in which beans or fish are cooked with onion, garlic, carrot and plenty of olive oil and served cold. The origin of the word is uncertain; a common view links it to the Greek "plaki", used for oven-baked dishes.
Borlotti beans belong to the bean varieties that came from the Americas and spread to the Mediterranean through Europe. Today barbunya pilaki is a fixture of meyhane tables in Istanbul and the Aegean, of the olive-oil display at neighborhood restaurants, and of long summer evenings.
