The story of this dish
Bánh xèo is named after the sizzle the batter makes when it hits the hot pan; "xèo" imitates that sound. Coloured bright yellow by turmeric, it is best known in southern Vietnam and the Mekong Delta as a large, thin crêpe made with coconut milk, while central Vietnam makes smaller, thicker versions.
The traditional filling usually includes pork belly and shrimp; this version uses chicken in place of pork. Half the fun is in the eating: pieces are wrapped in lettuce or mustard leaves with plenty of herbs and dipped in a sweet-sour fish sauce.
