The story of this dish
Okra is generally agreed to have originated in Africa, with Ethiopia and West Africa most often mentioned. It spread through the Arab world and the Mediterranean and became well established in Ottoman cooking.
In Turkey okra is cooked both fresh and dried. Tiny dried okra pods are strung on threads and kept for winter soups, and the Amasya region is known for them. Okra stewed with meat is a classic summer pot dish across many parts of Anatolia, almost always served with rice.
