The story of this dish
The word "albóndiga" comes from the Arabic "al-bunduqa", meaning hazelnut or small ball, which suggests meatballs most likely reached the Iberian Peninsula with Arab and Berber cooking during the al-Andalus period; meatball-like dishes appear in medieval Andalusian cookbooks.
Today albóndigas are cooked all over Spain, both as tapas in small dishes and as a main course at home. The sauce varies by region: alongside tomato-based versions, an almond and saffron "salsa de almendras" is much loved. Traditional recipes often mix beef and pork mince and add white wine to the sauce; this home version uses beef only, with stock and a little lemon juice in place of the wine.
