The story of this dish
Fried rice began as a thrifty Chinese home dish, the most practical way to use up leftover rice. Its exact origins are unknown, though many accounts link it to the lower Yangtze region and especially to the famous Yangzhou-style fried rice.
The simple egg version is made in homes and street kitchens almost everywhere in China. Carried abroad by Chinese emigrants, it has become one of the most-ordered dishes in Chinese restaurants around the world.
