The story of this dish
Tomatoes arrived in China from the Americas relatively late, and their Chinese name "fanqie", meaning "foreign eggplant", still reflects that foreign origin. They only became a common part of Chinese cooking largely during the 20th century.
Tomato and egg is not credited to any particular cook or region; it became a classic simply because it is cheap, quick and satisfying. For many people in China it is one of the first dishes they learn to cook, and the very definition of home food.
