The story of this dish
Mapo tofu is closely tied to Chengdu, the capital of China's Sichuan province, and is usually dated to the Qing dynasty in the 19th century. Legend has it that it was cooked by an elderly woman with a pockmarked face who ran a small eatery outside the city; "ma" refers to the pockmarks and "po" means old woman. How much of the story is true is uncertain.
