The story of this dish
Spanakopita combines the Greek spanaki (spinach) and pita (pie). Pies made with thin layers of pastry are a shared legacy of Byzantine and Ottoman cooking, which makes spanakopita a close cousin of the Turkish ıspanaklı börek.
In Greece the pie tradition is especially strong in the northern region of Epirus, where almost every village has its own fillings. During religious fasting periods, versions made only with greens, without cheese or eggs, are common too.
